slice an egg plant in circular slices and fry in olive oil until soft and cooked
slice an onion and zunchini in semi-circles
finely chop 3 garlic cloves
finely slice a red pepper and a few mushrooms
fry the onion for a couple of minutes before adding the other vegetables except the garlic which you add last as it takes the least time to cook.
when the vegetables are soft, add a teaspoon (or to taste) of ground cumin, salt and pepper.
serve on thin tortillas with chopped coriander sprinkled on top with salad and a guacemole.
