- Cook one bag of lentils for 12 min in a pressure cooker.
- in a separate pan, fry slices of chorizo for a few minutes (as much chorizo as you want)
- take the chorizo out of the pan and fry one sliced onion, two cloves of garlic and celery
- add 3-4 chopped potatoes and fry with one teaspoon of paprika and chorizo
- add one litre of veg or chicken stock, and a few tomatoes, romery and tyme and boil until the potato is almost cooked
- add chopped spinach and cooked lentils
- cook for 5/10 more minutes
- add seasoning, chopped parsley
- serve :-)
